Cheddar Cheese Muffins Recipe

  • 1cup milk
  • 3tablespoons unsalted butter, melted & then cooled
  • 1large egg, lightly beaten
  • 1/4tsp cayenne pepper
  • 34cups all-purpose flour
  • 1tablespoon baking powder
  • 1tablespoon granulated sugar
  • 12teaspoon salt
  • 34cup grated sharp cheddar cheese (or 1 cup cheese)
  • Directions

    1. Preheat oven to 350 degrees F.
    2. In a large bowl, combine milk, melted butter, egg& cayenne.
    3. In a second bowl, sift together flour, baking powder, sugar& salt.
    4. Stir in cheese.
    5. Add flour mixture to milk mixture and stir batter until it is just combined.
    6. The batter should be lumpy.
    7. Spoon the batter into muffin tins (buttered or lined) filling each about 2/3 full.

    1. Bake 20- 25 minutes.

  • Note:  You can add chopped picked jalapenos, if you like.  Or sprinkle cheese on top of the muffins.  Or introduce 1/2 cheese, 1/2 cubed ham.  Good eaten with chilli.

California Fig and Cranberry Orange Muffins

I have some figs which I purchased at Costco and haven't been able to use, so I slipped them into my freezer.

In the spirit of using up the food in my freezer, I went out to valleyfig.com to look for some recipes.

I am going to try to use up the figs -- perhaps this will be one of my first recipes at giving that a try.  You can see the picture has a morning brunch with a few of these on a red tablecloth.  Looks good.  Now, will they taste good?


California Fig and Cranberry Orange Muffins

Makes 24 muffins.

Ingredients

2-2/3 cups all-purpose flour 
3/4  cup granulated sugar 
2-1/2 teaspoons baking powder 
1/2 teaspoon salt 
1-1/3 cups milk 
2/3 cup vegetable oil 
2 eggs, lightly beaten 
2 tablespoons grated orange zest 
3/4 cup fresh, frozen or dried cranberries  

Directions

  1. Preheat oven to 375°F.  Line muffin pan with baking cups. In large bowl, combine flour, sugar, baking powder and salt; make well in center.  In separate bowl, combine milk, oil, eggs and orange zest; add to flour mixture all at once.  Stir just until combined.  Gently fold in figs and cranberries. Spoon batter evenly into muffin cups. Bake 20 to 22 minutes or until toothpick inserted in center comes out with just a few crumbs attached.  Cool in pan 5 minutes.  Remove from pan and cool on cooling grid.  Serve warm or at room temperature.

Morning Glory Muffins

Ha Ha!   Now you have a double recipe.

Ingredients:
In a large bowl mix
2 c.   flour
1 c. white sugar, scant
2 tsp. each Baking Soda, Cinnamon
1/4-1/3 tsp. salt

Stir in:
2 c. grated carrot
1/2 c. each raisins, coconut, chopped nuts
1 apple peeled & grated (or diced small)

Beat together;
350 degrees, 20 min., 14-16 muffins

3 eggs
1 c. vegetable oil
1/2 tsp. vanilla
Stir into flour mixture till just combined
Spoon into well greased or paper lined muffin cups.   I use silicon cups.
Fill to top.
