Sour Dough Waffles for Ceilidh

Sough Dough Waffles

2 cups flour
2 cups water

Place this in a plastic container and let it sour by leaving it slighty uncovered and stirring it occasionally (ever four hours) with a wooden or plastic spooon, not metal.

In a day or two you will see it bubbling and know that it is sour.

Take out most of the dough into another bowl.
Add 1 tsp soda
1/2 tsp salt
2 tablespoons of sugar

Let sit for 10 minutes.  The mixture will get twice as big so let that be the judge of the size of bowl you use.

Add 1 egg well beaten and 1/4 cup oil.

Let the waffles cook for 2 minutes each, at least, and perhaps three.
Oil the waffle iron well with a brush

For the next day, add 2 more cups water, 2 cups flour and with what was left in the container, it should sour in a day.

Ceilidh and I would usually triple the recipe to feed about 12 people.

The whipping cream and sliced fruit on top of the waffles also helped to feed them.

Crisp & Fluffy Waffles

Description:
This is a nice light, airy, delicious restaurant quality waffle.   Well worth the extra time to make!

Ingredients:
3/4 c. flour
1/4 c. cornstarch
1/2 tsp. salt
1/2 tsp. Baking Powder
1/4 tsp. Baking Soda

1 c. buttermilk     OR (not both!)
1 c. milk, less 1 Tblsp.& Add 1 Tblsp. vinegar- this is how you make buttermilk if not on hand
6 Tblsp. olive oil or vegetable oil
1 egg yolk

1 egg white
1 Tblsp. granulated sugar
1/2 tsp. vanilla

Directions:
1.   Stir together dry ingredients in one bowl
2.   In separate bowl, combine milk, vinegar, egg yolk, and oil. Whisk with fork.
3.   In a third bowl, beat egg white until nearly soft peaks.   Sprinkle sugar while shipping until glossy, Gently stir in vanilla
4.   Pour milk mixture into dry ingredients and whisk until blended.   Fold in egg white mixture with spatula.

For a four inch waffle, about 1/3 cup batter fills the waffle iron for each waffle, but the amount you need to fill your waffle iron will very according to the size.

Title: Caramel Buttermilk Syrup

Description:
Deliciously light, and so yummy served warm! Great for waffles, Pancakes, French toast, and ice cream! Also super delicious on pears or with applesauce.

Ingredients:
1 C unsalted butter
2 C Sugar
1 C Buttermilk (can make by putting 1 Tbsp vinegar in cup measure, then fill to 1 C with milk and let sit 5-10 min.)
2 Tbsp. Corn Syrup
1/4 tsp. salt
2 tsp. baking soda
2 tsp. pure vanilla extract

Directions:
In a LARGE saucepan (this bubbles up a lot) over medium heat, combine butter, sugar, buttermilk, corn syrup, and salt. Bring to boil. Boil for 3 min. Remove from heat and add baking soda, stirring to combine (syrup will bubble up and foam) Stir in the vanilla. Let cool somewhat before serving.

Glen's Waffles

1 egg for every mouth
Divide by 2 to get n
2n eggs separated save yolks
beat egg whites until firm and transfer to big bowl
preheat waffle irons
add 1/2n cups of whole wheat and 1/2n cups of white flour to mixing bowl
add n teaspons salt to mixing bowl
add n tablespoons of baking powder to mixing bowl
add 1/4n cups of canola (or other light oil) to mixing bowl
add egg yolks
add n cups of milk or butter milk
beat until smooth
fold into egg whites in large bowl
spoon on waffle irons and cook for 3 minutes

The toppings are up to you but I recommend maple syrup from Quebec with thimble berries and whip cream

Wyona's Wedding Waffles

The recipe book that you see in the picture is the original which came with the waffle iron in 1966.

Now that recipe book has been around the world a few times.
Wyona’s Wedding Waffles

1\3  cup butter
1 1\2 cups flour
2 1\2 tsp baking powder
1\4  tsp salt
1 tbsp brown sugar
2 eggs
1 cup + 1 tbsp water (milk)
1 tsp vanilla

Beat eggs with mixer until fluffy, fluffy, like meringue.
Mix together dry ingredients.
Fold water and well beaten eggs to dry ingredients.
Add oil.

Decorate with fruit of the season, whipped cream or syrup.
Take waffles out on deck and eat.
Make more waffles than the group can eat at one sitting. Then you will have waffles ready for the grandchildren anytime during the day, especially when they do not like adult food at dinner time.

This recipe came with the waffle iron that Greg and I were given as a wedding present.  We still use the waffle iron to this day. The apron in this picture was given to me by Art as a Christmas present a few years back. It is 6x the recipe because what a waste to make just one recipe.




Whoops! I guess Trent should have been more careful when he took the top off of the whip cream mixer. Clean up your mess Trent.

Gabe came late for breakfast one morning and all the fruit was gone. He was so sad. However, he just went out to the garden which Janet and Glen had planted for us, and he picked and cleaned his own strawberries and had a few pears on the side.
