For those of us who need a recipe that looks really fancy, but isn't hard at all to make...I asked Wyona for this recipe after LOVING it when she made it, but I don't know the original source. My side of the family does not do fancy cheese, so I was thankful to be educated by Trent and Wyona and you all.
Cranberries & Brie
round of brie (cut off some fuzzy stuff)
1 c. cranberries (frozen or fresh)
1/2 c. sugar
3 T. water
2 green onions, finely chopped
juice of half a lime
2 T. finely chopped pickled jalapenos
Put cranberries, water, and sugar in a pot; bring to boil, stirring often. Smash cranberries. Remove from heat and add rest of ingredients. Set aside.
Place brie in a baking dish (a glass pie dish works well) and pour cranberry mixture over top. Bake at 325 for 15 minutes. Serve warm with crackers for dipping.
