Cream Cheese Frosting

I made half a recipe today for a 9x13 pan of Carrot Cake
This is really one of the nicest cream cheese frostings I've made!
Cream Cheese Frosting
  • 16 ounces cream cheese (2 8-ounce bricks), softened.
  • 1 cup butter.
  • 1 tablespoon vanilla extract OR 1 teaspoons vanilla + 2 teaspoons maple extract.
  • 1/4 teaspoon salt.
  • 8 cups powdered sugar, or as needed.
  • chopped pecans for topping, optional.

Buttercream Frosting

Ingredients
1 cup of salted butter
3  teaspoons of vanilla
4 cups of icing sugar
4-5 tablespoons of  coffee cream (18% and up)

Trust me on this one and use salted butter. I haven’t come across a single buttercream icing recipe that uses salted, and I think that is what made the difference.  Salt and sweet are a match made in heaven. You want salt in this icing.

Whip that butter, with a paddle beater if you have it, if not, don’t worry.

Add in the icing sugar. 

Add in the cream. Not milk, cream. Perhaps this is another reason why it worked out so well.  So…to make my long story short…I used cream and it rocked. I used 4 tablespoons for my preference, you adjust to what you want. Stiffer icing = less cream. 
Whippier buttercream icing = more cream.

Vanilla…. I used 3 teaspoons, again, you can try a little more if you like.
Then whip it…whip it gooooood! 
Lordy, and try not to eat it all before it makes it to the cake.

Best White Icing Ever



Ingredients
This recipe makes 4 to 5 cups
         
4 cups confectioners' sugar
         
1 cup shortening
         
2 tablespoons water
         
1 teaspoon clear imitation vanilla extract


Directions
         In a large bowl, combine sugar, shortening, water and vanilla. Beat on low speed to combine, then beat on medium speed for a full five minutes. It won't look like Icing at first, but keep the mixer going for a full five minutes, and then you're done!

Note: If you're not using this for decorating, but just for icing the cake, thin the icing by adding 3 tbs. of corn syrup, or water to the icing.

Creamy White Frosting

Creamy White Frosting             submitted by Moiya Wood

Description:
This is out of the Breast of Friends and is my favorite frosting............so light and fluffy!

Ingredients:
Creamy White Frosting
2   Tblsp.       water
4 1/2 Tblsp.   sugar
Heat until sugar is dissolved

Mix in bowl:
2 1/2 c.         icing sugar
2/3 c.            margarine, softened
1                   egg
1 tsp.            vanilla
Mix well, gradually add sugar and water.   Beat again
Keeps in fridge for up to two weeks.
